2 cups arugula
2/3 cups grated parmesan, divided
1/4 cup walnuts
1/2 lemon, juiced
1/3 cup olive oil
2 cloves garlic
16 ounce package gnocchi
2 tablespoons unsalted butter
8 ounces ham steak, chopped
1 shallot, finely diced
1 cup heavy cream
2 teaspoons Garlic Galore Seasoning
1 teaspoon Lemon Rosemary Blend
1 cup peas
In a food processor, blend
arugula, 1/3 cup parmesan,
walnuts, lemon juice, oil, and
2 cloves garlic until broken down
and blended. Season with salt
and pepper if desired. Set aside.
Bring a saucepan of water
to a boil. Add gnocchi and
cook according to package
directions. Drain and set aside.
Meanwhile, melt butter in
a 12-inch nonstick skillet
over medium heat. Add
ham and shallots, and sauté
until lightly browned.
Add heavy cream, Garlic Galore Seasoning, Lemon Rosemary Blend,
and remaining 1/3 cup
parmesan cheese, simmer for
7-10 minutes or until thickened.
Stir often.
Stir in cooked gnocchi,
pesto, and peas.
(Optional: reserve some
pesto and peas for garnish). Cook until heated through.
