2 tablespoons unsalted butter
1 yellow onion, diced
2 bunches asparagus, ends trimmed and cut into 1-inch pieces
1 tablespoon minced garlic
4 cups chicken broth
2 teaspoons Lemon Rosemary Blend
1/2 cup heavy cream
1/2 lemon, zested
Melt butter in a large
saucepan over medium heat.
Add onion and cook for 5
minutes.
Add asparagus and garlic
and saute for 5 minutes
more.
Stir in broth and Lemon
Rosemary Blend. Cover
and simmer for about 10
minutes or until vegetables are
tender.
Use an immersion blend
to puree soup until
smooth.
Stir in heavy cream and
lemon zest. Season with
salt and pepper to taste.
Garnish with additional
cream and croutons if
desired.
