8-10 jalapenos, halved lengthwise and seeded
2 cups corn
4 ounces cream cheese, softened
¼ cup sour cream
¼ cup mayo
½ cup shredded cheddar
1 ½ tablespoons Cilantro Lime Seasoning
3 slices bacon, cooked and crumbled
Preheat oven to 400°F. Arrange jalapenos on a sheet pan.
In a bowl, combine corn, cream cheese, sour cream, mayo, cheddar, and Cilantro Lime Seasoning until completely combined.
Fill jalapenos with corn mixture. Bake for 10 minutes or until jalapenos are tender and filling is golden.
Garnish with bacon.
Serve with avocado crema if desired. (Blend together 1 avocado, 2 tablespoons sour cream, and juice from 1 lime. Season with salt and pepper to taste. Thin out with water if needed.)
