2 pounds potatoes, cut into bite size pieces
⅓ cup oil
⅓ cup red wine vinegar
1 tablespoon minced garlic
1 tablespoon Dijon mustard
2 tablespoons Mediterranean Dry Rub
¼ red onion, thinly sliced
1 cup pitted kalamata olives
½ cup sundried tomatoes, sliced
¼ cup capers
3 tablespoons fresh dill
½ cup crumbled feta
Add potatoes to a saucepan and cover with water. bring to a boil over medium heat. Cook for 10-15 minutes or until fork tender.
Meanwhile prepare dressing: In a large bowl, whisk together oil, vinegar, garlic, Dijon mustard, and Mediterranean Dry Rub.
Drain cooked potatoes and immediately add to bowl with dressing. Toss to coat. Rest for 30 minutes to allow potatoes to soak up dressing.
Once cooled to room temp, add remaining ingredients and toss to combine. Serve immediately or store in the refrigerated until serving.
