1 ½ pounds boneless skinless chicken breasts
2 teaspoons Carne Asada Seasoning
15.5 ounce can corn, drained
15.5 ounce can pinto beans, drained and rinsed
15.5 ounce can black beans, drained and rinsed
10 ounce can fire roasted tomatoes with green chilies
8 ounce block cream cheese
5 tablespoons Ranch Dressing & Dip Mix
3 cups chicken or vegetable stock
Add all ingredients to a slow cooker. Cover and cook for 4-6 hours or until chicken in very tender.
Shred chicken and stir soup until cream cheese is completely melted into the soup.
Serve with toppings such as bacon, scallions, and/or cilantro.
