¼ cup mayo
½ lime, juiced
1 tablespoon Cilantro Lime Seasoning
4 cups shredded red cabbage
½ cup pickled red onion
1 pound ground chicken
2 tablespoons Jamaican Jerk Seasoning
4 slices of pineapple (core removed)
4 hamburger buns
In a bowl, whisk together mayo, lime juice, and Cilantro Lime Seasoning. Add the cabbage and pickled onion; toss to combine in the dressing. Refrigerate until serving.
Mix together ground chicken and Jamaican Jerk Seasoning until complete combined. Shape into 4 patties. Heat grill or grill pan over medium heat. Grill patties for about 5 minutes on each side or until completely cooked through: 165°F.
Grill pineapple for about 2-3 minutes on each side until softened and slightly caramelized.
Toast buns if desired.
Serve jerk chicken burgers on toasted buns with grilled pineapple, and prepared slaw.
