2 cups almond flour
1 tablespoon baking powder
8 ounces shredded mozzarella cheese
3 ounces cream cheese
3 eggs, divided
3 tablespoons Everything Bagel Spice Blend
Preheat oven to 425°F. Grease a sheet pan.
Whisk together almond flour and baking powder.
Add mozzarella cheese and cream cheese to a separate bowl. Microwave for 30 second intervals, whisking after each 30 seconds, until melted and combined.
Add cheese mixture and 2 eggs to the almond flour and stir until completely combined.
Roll 1/4 cup amount of dough into a 6-inch rope. Pinch ends together to form a bagel shape and place on the prepared sheet pan. (Dough will be sticky. Lightly grease hands to work dough more easily.) Repeat with remaining dough.
Beat remaining egg. Brush the tops of the bagels with egg wash. Sprinkle evenly with Everything Bagel Spice Blend.
Bake for 13-15 minutes or until tops are golden and crisp.
