2 tablespoons oil
2 tablespoons low sodium soy sauce
2 tablespoons Jamaican Jerk Seasoning
4 (4 ounce) chicken breasts
1 cup finely diced pineapple
¼ cup finely diced red onion
½ cup finely diced mango
¼ cup finely diced red bell pepper
2 tablespoons minced cilantro
In a bowl, whisk together oil, soy sauce, and Jamaican Jerk Seasoning. Add the chicken and rub the mixture all over the chicken. Marinate for 30 minutes.
Meanwhile, toss together remaining ingredients to make salsa. Season with salt and pepper to taste.
Preheat grill or grill pan over medium-high heat. grill chicken for about 5 minutes on each side or until cooked through: 165°F.
Serve grilled chicken and salsa over rice if desired.
