8 ounces large shells
2 cups cubed butternut squash
2 tablespoons Natural Grapeseed Oil, divided
1/2 teaspoon Rancher Rub
1/2 pound sausage
1/2 yellow onion, diced
1 1/2 tablespoons Herbes de Provence Blend
4 cloves garlic, minced
1 tablespoon flour
2 cups heavy cream
2 cups chopped kale
Prepare pasta according to package directions. Drain and set aside.
Preheat oven to 400°F. Line a baking dish or sheet pan with foil. Toss butternut squash with 1 tablespoon Natural Grapeseed Oil and Rancher Rub. Roast for 25 minutes or until tender.
Meanwhile, heat remaining 1 tablespoon Natural Grapeseed Oil in a 12-inch nonstick skillet over medium-high heat. Add sausage, onion, and Herbes de Provence Blend. Cook until sausage is browned.
Stir in garlic and flour. Saute for 1 minute.
Add heavy cream and kale. Cook until kale is wilted and sauce has thickened.
Stir in cooked pasta and roasted butternut squash. Season with salt and pepper to taste.
