1 pound chorizo, sliced into rounds
1 yellow onion, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1/2 pound sweet potatoes, cut into 1/2-inch pieces
1 (15.5 ounce) can black beans, drained and rinsed
Preheat oven to 400°F. Grease a sheet pan. Prep chorizo, onion, peppers, and sweet potatoes. Drain and rinsed black beans.
Transfer chorizo, onion, peppers, sweet potatoes, black beans, to the prepared sheet pan and toss with Fajita Seasoning and Natural Grapeseed Oil. Bake for 20 minutes.
Remove sheet pan from oven. Use a spoon to make 6 wells in the ingredients on the sheet pan. Crack an egg into each well and bake for an additional 7-9 minutes, or until eggs are cooked to desired doneness.
