2 pounds gnocchi
4 tablespoons Natural Grapeseed Oil
2 shallots, finely diced
2 pounds cherry tomatoes
2 tablespoons minced garlic
2 tablespoons Italian Seasoning
4 burrata balls
Optional: fresh basil and/or parsley
Prepare gnocchi according to package direction. Reserve ½ cup pasta water.
Heat Natural Grapeseed Oil in a deep 12-inch skillet over medium heat. Add shallot and cherry tomatoes. Saute for 5 minutes, stirring occasionally.
Reduce heat to medium low. Stir in garlic and Italian Seasoning. Saute for about 10 minutes more, or until tomatoes are softened and starting to burst.
Add the reserved pasta water and cooked gnocchi. Toss to combine. Simmer for a few minutes more to allow flavors to combine.
Divide prepared gnocchi among bowls. Top with burrata and fresh herbs such as parsley and/or basil.
