¾ cup mayo
½ cup sour cream
3 tablespoons Cilantro Lime Seasoning
1 cup crumbled cotija cheese
12 ounces pasta, prepared according to package directions and slightly cooled
4 ears of corn, roasted or grilled; corn cut from cobs
2 cups shredded romaine lettuce
2 scallions, sliced
1 avocado, diced
Optional: smoked paprika and lime wedges
In a large bowl, combine mayo, sour cream, Cilantro Lime Seasoning, and cotija cheese.
Add cooked pasta and toss until coat completely in dressing.
Stir in remaining ingredients. Season with salt and smoked paprika is desired. Can be serve with lime wedges.
