1 cup grits, prepared according to package directions
1 yellow onion, diced
1 green bell pepper, diced
1 pound shrimp, peeled and deveined
Prepare grits according to package directions. Stir in shredded cheddar cheese. Season with salt and pepper to taste. Turn off heat and cover to keep warm.
Meanwhile, heat Natural Grapeseed Oil in a 12-inch nonstick skillet over medium-high heat. Add onion and pepper and sauté for about 7 minutes or until onion is soft and translucent.
Add diced tomatoes, green chilies, Cajun Seasoning, and shrimp. Stir to combine, reduce heat to medium, and cover. Cook for about 5 minutes or until shrimp is pink and opaque.
