1 pound beets
1 1/2 tablespoons Natural Grapeseed Oil
1 1/2 tablespoons balsamic vinegar
1 1/2 teaspoons Greek Seasoning
8 ounces feta
3 ounces cream cheese, softened
2 tablespoons honey
14 ounces baguette
1/4 cup chopped pistachios
2 tablespoons fresh dill
Preheat oven to 425°F. Rinse beets and trim ends. Place beets in a baking dish; add 1/2 cup water. Cover with foil. Bake for 1 hour or until tender.
Once beets are cool enough to handle, peel away skins. Cut beets into 1/2-inch pieces.
Toss beets with Natural Grapeseed Oil, balsamic vinegar, and Greek Seasoning. Set aside.
Add feta, cream cheese, and honey to a small food processor. Blend until completely smooth.
Slice baguette and place slices on a sheet pan. Brush slices with oil. Bake for 3-5 minutes or until golden brown and toasted.
Spread whipped feta on the toasted slices. Top with roasted beets.
Garnish with pistachios and dill.
