1 yellow onion, chopped
1 pound carrots, peeled and chopped
3 cups vegetable broth
1/4 cup Sweet & Spicy Thai Chili Sauce, divided
Heat Natural Grapeseed Oil in a large saucepan over medium heat. Add the onion and carrots; saute until onions are translucent.
Add the vegetable broth, coconut milk, and Sweet & Spicy Thai Chili Sauce. Bring to a boil. Add lentils and continue cooking for about 20 minutes more until both carrots and lentils are tender.
Puree soup until smooth.
