2 heads cauliflower, cut into florets
2 tablespoons Natural Grapeseed Oil
8 ounces bacon
2 tablespoons unsalted butter
2-3 jalapenos, seeded and diced
8 ounces cream cheese
1 cup heavy cream
1/2 cup Alfredo Extraordinaire
1 cup shredded cheddar
2 scallions, sliced
Preheat oven to 400°F. Add cauliflower to a sheet pan, toss with Natural Grapeseed Oil and season with salt and pepper. Bake for about 25 minutes or until tender.
Line a second sheet pan with foil and lay bacon in a single layer. Bake for about 15 minutes or until bacon is cooked to desired doneness. Transfer bacon to a paper towel line plate.
In a large high-sided pot, melt butter over medium heat. Add jalapenos and saute until tender.
Add cream cheese and heavy cream. Stir until cream cheese is melted and a sauce comes together. Stir in Alfredo Extraordinaire and cheddar cheese until melted and combined.
Add roasted cauliflower and toss in sauce.
