1 (15.5 ounce) can chickpeas, drained and rinsed
Lightly mash chickpeas in a bowl, keeping many whole. Add the cucumber, tomato, Mediterranean Dry Rub, feta, mint, and balsamic vinegar. Refrigerate until serving.
Preheat grill to medium heat. Clean and grease the grill grates. Brush chicken with Smoky Bacon Grapeseed Oil and season with Rodeo Rub.
Cook chicken breasts for about 5 minutes on each side until browned and completely cooked through: 165F. Remove chicken from grill and let rest before slicing: Serve chicken with prepared salad.
