1/4 cup butter
3 pounds yellow onion, sliced
1/2 cup white wine
6 cups beef broth
1 tablespoon Garlic Galore Seasoning
1 tablespoon Herbes de Provence Blend
1 small baguette
1 1/2 cups shredded gruyere
Melt butter in a large saucepan over medium heat. Add onions and sauté, stirring often, until caramelized and golden; about 30 minutes.
Deglaze pan with white wine, scraping up any brown bits from the bottom of the pan.
Add beef broth, Garlic Galore Seasoning, and Herbes de Provence Blend. Bring to a boil. Reduce heat and simmer for 20 minutes.
Season soup to taste with salt and pepper.
Preheat broiler. Slice baguette and broil until golden, about 1-2 minutes per side.
Fill oven safe crocks with soup. Top with toasted baguettes and shredded gruyere. Return to oven and broil until cheese is melted.
