1 tablespoon Coconut Oil
1 pounds lean ground beef
1 red bell pepper, sliced
1 bag Curry Skillet Meal Seasoning
1 can coconut milk
1 cup peas
1 cup dry rice
1/4 cup cilantro, chopped
1 lime, cut into wedges
Heat Coconut Oil in a 12-inch nonstick skillet over medium-high heat. Add ground beef, red bell pepper, and Curry Skillet Meal Seasoning. Sauté until beef is cooked through.
Stir in coconut milk and peas. Bring to a simmer. Season with salt to taste.
Meanwhile, prepare rice according to package directions.
Serve curry beef and sauce over rice. Garnish with cilantro and serve with lime wedges.
