1/2 cup rice vinegar
1/2 cup water
1/4 cup sugar
2 teaspoons salt
1 large carrot, julienned
1/2 English cucumber, julienned
1/2 red onion, thinly sliced
1 tablespoons Natural Grapeseed Oil
1 bag Asian Skillet Meal Seasoning
1/4 cup no salt added tomato sauce
4 buns
Combine water, rice vinegar, sugar, and salt. Heat in microwave or on the stovetop until sugar and salt are dissolved.
Add carrot, cucumber, and onion to a bowl. Cover with rice vinegar mixture. Refrigerate for at least 3 hours.
Heat a 10-inch nonstick skillet over medium-high heat. Add the ground chicken and Asian Skillet Meal Seasoning. Cook until the chicken is completely cooked through.
Reduce heat to medium-low. Stir in tomato sauce and Teriyaki Sauce and cook until heated through and thickened.
Serve on buns with pickled vegetables and cilantro if desired.
