2 tablespoons Roasted Garlic Grapeseed Oil, plus extra for toasting baguette
1 yellow onion, thinly sliced
½ teaspoon salt
1 teaspoon sugar
1 cup Fig Spread
½ cup crumbled blue cheese
Heat 2 tablespoons Roasted Garlic Grapeseed Oil in a skillet over medium-low heat. Add onion and season with salt and sugar. Sauté for about 30 minutes, stirring occasionally, until onions are caramelized and a deep golden brown. Remove pan from heat.
Preheat oven broiler. Cut baguette into 1-inch slices. Place cut side up on a sheet pan. Drizzle the slices with Roasted Garlic Grapeseed Oil. Broil 2-3 minutes, or until lightly toasted.
Spread each baguette slice with about 2 teaspoons of Fig Spread. Top with caramelized onions and blue cheese.
Garnish with fresh herb such as rosemary or thyme, if desired.
