12 ounces smoked chicken sausage, sliced
1 bell pepper, chopped
2 cloves garlic, minced
3 teaspoons Cajun Seasoning, divided
Heat Natural Grapeseed Oil a 12-inch nonstick skillet over medium-high heat. Add the sausage and bell pepper. Cook for about 5 minutes or until browned.
Stir in tomatoes, garlic and 2 teaspoons Cajun Seasoning. Cover and cook over medium-low heat until tomatoes are soft and skins begin to burst.
Meanwhile, prepare grits. Bring chicken broth to a boil in a medium saucepan over medium heat. Whisk in grits. Reduce heat to medium low, cover, and cook for about 5-7 minutes or until tender. Stir occasionally.
Whisk in cheddar cheese and remaining 1 teaspoon Cajun Seasoning.
