1 1/2 tablespoons Cajun Seasoning
1 pound carrots, sliced
1/2 teaspoon Rancher Rub
1 tablespoon melted Coconut Oil
2 avocados, diced
1/2 red onion, diced
2 tablespoons cilantro, chopped
Preheat oven to 375°F. Line a sheet pan with foil and grease. Place salmon on the sheet pan, season with Cajun Seasoning.
Toss green beans and carrots with Rancher Rub and Coconut Oil. Arrange vegetables around salmon on the sheet pan.
Bake for 25 minutes or until vegetables are tender and salmon is cooked through: 145°F.
Meanwhile, prepare avocado salsa. In a medium bowl, toss together avocados, lime juice, red onion, and cilantro. Season with salt and pepper to taste.
