1 tablespoon Natural Grapeseed Oil
1 orange bell pepper, sliced
2 celery stalks, diced
1 large tomato, diced
2 scallions, sliced
Preheat oven to 350°F.
Heat Roasted Garlic Grapeseed Oil in a 10-inch nonstick skillet over medium-high heat. Add the bell pepper, celery, tomatoes, chicken Andouille sausage, and Cajun Seasoning and cook until vegetables are tender, about 7-10 minutes. Stir in scallions.
Beat eggs and pour into the skillet.
