1 (3 pound) pound beef top round roast, trimmed
5 chipotle peppers in adobo sauce, finely chopped
6 cloves garlic, minced
2 limes, cut into wedges
Season the roast with Adobo Seasoning.
Heat a 12-inch nonstick skillet over medium-high heat. Sear the roast on all sides until brown. Transfer the roast to a slow cooker and pour beef broth and beer around the roast.
In a small bowl, mix together apple cider vinegar, cumin, chipotle peppers in adobo sauce, tomato paste, brown sugar, and garlic. Coat the roast with mixture.
Cover and cook on low for 7-8 hours or until very tender.
Transfer the roast to a large bowl or cutting board and shred with two forks. Skim and discard the fat from the top of the cooking liquid in the slow cooker. Transfer beef to a serving dish and add some of the cooking liquid.
