2 (4 ounce) boneless skinless chicken breasts, cut into strips
1/2 teaspoon Rancher Rub
2 large eggs, beaten
1 tablespoon Natural Grapeseed Oil
1 small bell pepper, diced
1 carrot, julienned
1/2 cup Orange Sauce
3 scallions, sliced
Heat 1 teaspoon Natural Grapeseed Oil in a 12-inch nonstick skillet over medium-high heat. Season the chicken with Rancher Rub. Cook the chicken until it is golden brown and cooked through. Transfer to a plate.
Reduce heat to medium. Add the beaten eggs and scramble until cooked through. Transfer to the plate with the chicken.
Add the remaining 1 tablespoon of Natural Grapeseed Oil to the empty skillet. Add the bell pepper and carrot. Saute until tender.
Add the cooked rice and Orange Sauce; toss to combine and coat all the ingredients in the sauce.
