1 cup finely diced pineapple
1 avocado, diced
2 tablespoons chopped cilantro
½ lime juiced
1 cup dry long grain rice, prepared according to package directions
2 tablespoons chopped cilantro
1 pound ground pork
½ cup Chipotle Pineapple Marinade
15.5 ounce can black beans, drained and rinsed
Combine pineapple, avocado, 2 tablespoons cilantro, and lime juice. Season with salt and pepper if desired. Set aside.
Prepare rice according to package directions. Stir in remaining 2 tablespoons cilantro. Season with salt and pepper if desired.
Meanwhile, heat a 12-inch nonstick skillet over medium-high heat. Add the pork and cook, breaking up with a wooden spoon, until completely cooked and starting to brown. Remove from heat and stir in Chipotle Pineapple Marinade
Build bowls with rice, cooked pork, black beans, and pineapple salsa. Drizzle with extra Chipotle Pineapple Marinade if desired.
