Shrimp Scampi Risotto

5 cups chicken broth
2 tablespoons Roasted Garlic Grapeseed Oil
1 white onion, diced
2 cloves garlic, minced
1/2 cup white wine
8 ounces arborio rice
1 cup peas
1 pound raw shrimp, peeled and deveined
1 tablespoon Scampi Blend
1/4 cup parmesan cheese
2 tablespoons butter
Add chicken broth to a saucepan. Bring to a simmer.
Heat Roasted Garlic Grapeseed Oil in a large heavy pot over medium heat. Add onions & garlic and saute until the onions are soft and translucent.
Stir in the rice and sauté for 1-2 minutes.
Add white wine and saute until absorbed.
Add a ladle-full of broth and cook, stirring occasionally, until the pan bottom is dry when rice is pulled back.
Begin adding the rest of the broth, 1 ladel at a time, stirring constantly until each addition is absorbed.
Stir in peas, shrimp, and Scampi Blend. Cook until shrimp are opaque and firm. Stir in parmesan cheese and butter.
Season with salt and pepper to taste.
