8 ounce rigatoni, prepared according to package directions
3 cups arugula
⅓ cup julienned sun-dried tomatoes
¼ cup toasted pinenuts
¼ cup grated parmesan
DRESSING:
juice from 1 lemon (about ¼ cup)
¼ cup oil of choice
1 tablespoon Lemon Rosemary Blend
1 clove garlic, minced
Combine dressing ingredients in a jar. Cover and shake vigorously until combined.
Add remaining ingredients to a bowl.
Pour dressing over top and toss until completely combined.
