1 (15.5 ounce) can chickpeas, drained and rinsed
1 head cauliflower, cut into small pieces
1 lime, juiced
1 avocado, diced
Preheat oven to 400°F. Line a sheet pan with foil.
Toss chickpeas and cauliflower with Fajita Seasoning and Natural Grapeseed Oil. Spread in a single layer on the prepared sheet pan. Bake for 30 minutes or until browned and crisp.
Meanwhile, combine Greek yogurt, cilantro, and lime juice with an immersion blender or food processor until completely combined.
