2 cups cooked, shredded chicken
8 ounces cream cheese, softened
¼ cup finely diced red onion
1 cup shredded cheddar cheese
2 tablespoons Buffalo Blend
10-12 egg roll wrappers
oil for frying
In a bowl combine chicken, cream cheese, red onion, cheddar, and Buffalo Blend until completely combined.
Spoon approximately 3-4 tablespoons of filling onto each egg roll wrapper and fold according to package directions, using water to seal the edges of the wrappers as you go.
Pour 2-3 inches of oil into a deep pot. Heat the oil to 350 degrees F. Fry egg rolls, turning occasionally, until browned all over, approximately 3-5 minutes.
Drain on paper towels, then serve with dipping sauce such as ranch or blue cheese dressing.
